“Forever with Me: A Culinary Voyage“

Embark on a journey that begins at its roots on the small island of Sicily, where tuna were plentiful and the ingredients unique. Travel through the foggy city of Parma, renowned for mushrooms and cheese, and reflect on the influences of a German interlude. Finally, arrive in the Land of Smiles, where sweet and sour unite, always infused with the warm embrace of Chef Bellitti’s childhood memories. 

This menu, crafted from his memories and experiences, represents where Chef Roberto comes from, where he has grown, and what is forever with him. “As long as you know where you come from, you will always be at home,” he believes.

𝐑𝐚𝐝𝐢𝐜𝐢 𝐧𝐞𝐥 𝐦𝐚𝐫𝐞𝐕𝐮𝐥𝐜𝐚𝐧𝐨
Almond and oregano crusted yellowfin tuna loin, pickled shallots, confit cherry tomatoes, black olive powder, and orange reduction. (Named after Vulcano, a small island near Sicily famous for its tuna.) Paired with Chardonnay.
 

𝐆𝐫𝐨𝐰𝐢𝐧𝐠 𝐢𝐧 𝐭𝐡𝐞 𝐟𝐨𝐠
Homemade Spätzle with porcini mushroom sauce, Parmesan cheese espuma, and mushroom powder. (Inspired by Chef
Roberto‘s upbringing in Parma, where autumn and winter bring fog, mushrooms, and of course, Parmesan cheese.) Complemented by Pinot Noir. 

𝐌𝐞𝐞𝐭 𝐧𝐞𝐰 𝐡𝐨𝐫𝐢𝐳𝐨𝐧𝐬
Braised cuttlefish with purple potato soil and vanilla coconut curry sauce. Paired with Riesling. (Capturing the flavors of Thailand that Chef Roberto encountered during his first travels.) 

𝐒𝐰𝐞𝐞𝐭 𝐡𝐮𝐠
His mother’s tiramisu. Recommended with sweet wine: Marsala, Port, or Muscat. (The exact recipe of his mother, evoking memories of childhood each time he makes or tastes it.)
